Buffalo Cauliflower + Yogurt Ranch + Salad

It’s party time! If you are having people over for Super Bowl this weekend, make cauliflower “wings”. They literally cannot be easier to make and they will fly off the plate. Trust me, people will be licking their chops and the platter! 

Serve your wings on a platter with carrots and celery and the dipping sauce OR serve it as a salad. Salad, you say? Trust me, this salad is such a delicious bowl of food you will want to make it on non-Super bowl days. 

Buffalo Cauliflower + Yogurt Ranch + Salad

Ingredients

Buffalo Cauliflower

  • 1 big head cauliflower, chopped into bite size florets
  • Oil, for roasting
  • Salt, to taste
  • 1/4 cup Frank's Hot Sauce
  • 1/4 cup melted vegan butter

Yogurt Ranch

  • 1 cup plain vegan yogurt
  • 2 cloves garlic, pressed
  • 1 tablespoon freshly squeezed lemon juice
  • Big handful chopped dill and parsley
  • Salt and pepper, to taste

Salad

  • 1 head romaine, chopped
  • 1 avocado cubed
  • 1/2 small red onion, cut into rings
  • 1/2 cup tomatoes, chopped

Instructions

Buffalo Cauliflower

  1. Preheat the oven to 400. Line a baking sheet with parchment paper.

  2. Toss the cauliflower with oil and salt. Roast for 30 minutes.

  3. Whisk together the hot sauce and butter. Take the cauliflower out of the oven and pour the sauce over the top. Toss to coat. Put back in the oven for another 10 to 15 minutes, or until fork tender.

Yogurt Ranch

  1. Mix the yogurt with the garlic, lemon juice, dill, parsley, salt and pepper. Taste and adjust.

Salad

  1. Make your salad by adding the romaine, avocado, red onion and tomatoes to a bowl. Toss with the yogurt ranch and top with the buffalo cauliflower.
