I cannot get enough of this gorgeous bowl of food! How amazing do those little shaved pieces of cauliflower look? Well, they taste even better. This is a definite crowd pleaser – an elegant side, an appetizer or one of several salads on a buffet at a dinner party.
And it is so easy, it’s not even a recipe. Here is a guideline but make as much or as little as you want!
Shaved Cauliflower Salad
- 1/4 of a head cauliflower
- 1 tablespoon fresh lemon juice
- 1/4 cup golden raisins
- 1/4 cup toasted almonds
- 1 tablespoon fresh chives, thinly sliced
Shave the cauliflower on a mandoline.
Toss the cauliflower with fresh lemon juice and let it sit for a few hours to just soften.
Toss with golden raisins, toasted almonds, fresh chives and a sprinkle of salt.
Serve immediately or cover and serve later!
