Chopped Artichoke Salad Sandwich

It’s picnic season and I have the best sandwich for you! I posted this on Instagram a while back, and it was super popular. It’s chopped artichoke salad on toast!

This salad was inspired by an article by Ben Bims in the LA Times. The article talked about the “the freedom, and serenity, in using prepared artichokes.” I love artichokes and I love the ones that come in a jar, so I’m here to spread the word!

In my version, chopped artichoke hearts are mixed with red onions, fresh parsley and dill, a little lemon juice and lots of mayo. It’s unique, easy to make, better than anything you can buy and delicious!

I am not giving exact measurements because you don’t need them! Make it taste good; I trust you!!

Chopped Artichoke Salad Sandwich

Ingredients

  • Jar or can of artichoke hearts, drained and chopped
  • Diced red onions
  • Freshly chopped dill
  • Freshly chopped parsley
  • Freshly squeezed lemon juice
  • [Vegan] Mayo, to taste
  • Salt and pepper, to taste

Instructions

  1. Add the artichoke hearts and onions to a bowl. Add dill and parsley and mix together. Season with a little lemon juice and add as much mayo as you like. Season with salt and pepper. Pile high on your favorite toast. Enjoy!
