“How To” Roundup

Technically this whole blog is one big “How To” because I didn’t know how to do most of these things until the vegan project commenced. It is my way of proving that much of what happens in the kitchen is way easier than I ever thought.

1. How to Make Homemade Vegetable Stock from Frozen Vegetable Scraps. Save the peel and ends of the onions, the carrot peel, the zucchini seeds, garlic paper, celery ends, turnip and parsnip ends, leek ends (be sure they are clean), parsley stems, etc. in a freezer safe container. 2. How to Make Homemade Vegan Milk. Easy. Economical. Pure. Make your own now. It is the same procedure no matter the base. Brazil nuts are fantastic too. But, if there is a nut allergy, stick with quinoa milk.

3. How to Make a Flax Egg. This is a great substitution that can be used in baking and in pancakes. Chia powder works exactly the same way.

1 flax egg = 1 tablespoon of ground flax + 3 tablespoons filtered water

4. How to Prep a Butternut Squash. Every time I peel, deseed, and dice one of these I quietly laugh to myself. Before a few years ago, I never even purchased a butternut squash! Once you get the hang of it, you will be making tons of butternut squash dishes!

5. How to Caramelize Onions. Onions can be caramelized with or without oil. It takes a little time but the effort is worth it!

6. How to Roast Beets. One of my all time favorites, beets are earthy and sweet at the same time. Roasting them brings out the best of both. Wrap, roast, peel. Toss with olive oil, balsamic vinegar and red onions for the perfect beet salad every time.

7. How to Pickle Red Onions. These little pink beauties are great on avocado toast and on top of tofu or tempeh.

8. How to Freeze Mint and Other Herbs. If you have too many herbs, freeze them so you can use them all winter.

9. How to Roast Garlic. You have to know how to do this. Besides a great addition to many recipes, roasted garlic makes a great spread for good bread.

10. How to Roast Red Peppers. Why buy theses in a jar when you can make them so easily yourself? I roast peppers weekly and use them in sauces, salad dressing, hummus and more!
