Crispy Orange Tofu & Broccoli

The juice of fresh oranges makes this such a delightful meal.  It is so easy to make and there are never leftovers!

1 package extra firm tofu
Cornstarch
Sunflower oil
1 head of broccoli
1 cup rice

Orange Sauce
The juice of three oranges (about 1 cup)
The juice of one lemon (about 2 tablespoons)
1 tablespoon soy sauce
1 tablespoon vegan brown sugar
1/4 teaspoon rice vinegar
1/8 teaspoon garlic powder
1/2 tablespoon corn starch

Press the tofu.  Cut the broccoli into florets.  Whisk the ingredients for the sauce together.  Set aside.

Get the rice going.

Cube the tofu.  Toss with cornstarch.  Shake off the excess.  Heat sunflower oil in a non-stick skillet and add the tofu.  Cook until crispy on all sides, tossing the tofu around while its cooking.

Steam the broccoli.  Drain and set aside.

When the tofu is crispy, pour the marinade into the skillet.  It will bubble and get thick.  Add the broccoli and toss it all together to coat everything with the orange sauce.

Serve over rice and pour on the extra sauce.  Enjoy!
