Dreena Burton’s “Nicer” Krispie Squares

I found this recipe in Dreena Burton’s book Plant-Powered Families. I love that book and love this recipe. Luckily, she also posted it on her website so I can repost it here. These are super easy to make, healthy and delicious. What a great snack/dessert!

Makes 25 squares (depending on how you cut them!)

1⁄2 cup macadamia nut butter (preferably homemade*)
1⁄2 cup brown rice syrup
2 tablespoons coconut sugar
1 teaspoon vanilla extract
1⁄4 tsp sea salt
1⁄4 tsp agar powder **
4 cups brown rice cereal

* To make homemade macadamia nut butter, place 2 cups of unroasted macadamia nuts into the food processor and let it rip until it is butter.

** Agar powder really helps to hold the squares together. I made them once without it and they kind of didn’t stay together too well. They are still delish, though!

Line a 9×9 brownie pan with parchment paper. Pour the cereal into a big mixing bowl.

Place the macadamia butter, brown rice syrup, coconut sugar, vanilla, salt, and agar powder into a small saucepan. Over medium heat, use a whisk to stir the mixture until it starts pulling away from the sides of the pot.

Remove from heat and pour over the cereal. Use a wooden mixing spoon to fully incorporate with nut butter mixture.

Turn the whole deal out into the middle of parchment paper in the brownie pan. Use the wooden spoon to spread it to the edges and then the back of a regular spoon to press it down evenly.

Place in the refrigerator to cool and set. Cut into squares and enjoy!
