To make the cashew milk, add the cashews and water to the blender and blend until creamy and smooth.
To make the overnight oats, add the cashew milk, oats, maple syrup, chia seeds and salt to pint size jar. Mix to combine. Let sit for 4 hours to overnight.
To make the cashew cream, add the cashews and water to the blender and blend until creamy and smooth.
Add the cashew cream, cacao powder and maple syrup to a small bowl and whisk to combine.
To assemble the parfaits, add half of the oats to a small jar or bowl. Top each with as much chocolate cashew cream as you want. Enjoy!
