Cinnamon Apple Overnight Oats

Inspired by the original overnight oats, Bircher Muesli, this variation of overnight oats is one healthy breakfast or snack!

  • 1/3 cup oats
  • 1 tablespoon hemp seeds
  • 1/4 teaspoon ground vanilla
  • 1/2 apple, grated (use what you like, I love Gala and Pink Lady!)
  • 1 teaspoon freshly squeezed lemon juice
  • 1 cup plant milk (I like homemade cashew)
  • 1 tablespoon maple syrup


  1. Add the oats, hemp seeds, and vanilla to a jar.

  2. Grate half of the apple on a box grater and save the rest for another snack and garnish. Toss with fresh lemon juice. Add the grated apples to the jar. Stir around.

  3. Add the plant milk and maple syrup and stir around. Add a shake of cinnamon. Cover and let sit overnight in the refrigerator.

  4. To eat, garnish with chopped almonds and freshly diced apples. Enjoy!
