Heat a skillet over medium and add the oil.
Add the chopped scallions, shredded carrots, chopped bok choy and frozen peas. Cook for three or four minutes, until the bok choy is bright green and tender.
Add the rice (right out of the refrigerator or freezer) and the tamari. Mix well.
Cook until the rice is heated through, a minute or two but a bit longer if frozen.
To serve, sprinkle with sesame seeds. Enjoy!
