Homemade Coconut Yogurt

I said in my last post – the one in which I raved about The Coco Jack – that I was going to make homemade coconut yogurt. And so I did!

I never would have thought in a million years that I would make my own yogurt. But it is super easy! I used my Coco Jack to get the coconut meat out of 2 coconuts, added some coconut water, and probiotics. After letting it sit out for a day, it fermented into yogurt.

And by the way, it is the best yogurt I have ever had! Yet another food item I will be making, not buying! My yogurt is pure, clean and simple. Who doesn’t want that??

Note: Keep probiotic powder in the refrigerator so that you will be ready to make yogurt or cheese any time. I use Ther-Biotic Complete Powder by Klaire Labs.

And, FYI, I got this recipe from The Coco Jack website.

2 cups raw young Thai coconut meat (about 2 coconuts)
3/4 cup young Thai coconut water
1/4 teaspoon probiotic powder

Place the ingredients in the Vitamix or blender and let it go until the mixture is smooth. Empty into a glass container and cover. (The Coco Jack recipe said that the mixture will expand. Mine didn’t. You can always leave the cover open a crack.)

Leave the yogurt on the counter and ferment for 18 to 24 hours. How long you leave it for will depend on how yogurt-y you want your yogurt. Then put it in the refrigerator. Serve plain or topped with fresh or dried fruit or granola.

Or for something fun, puree some strawberries in the food processor with a bit of water. Strain out the juice, leaving the seeds behind and mix into the yogurt. Top with more fruit. A fun pink treat! Or you could puree blueberries. Or any fruit you like. This is how I turned plain yogurt into strawberry for my son. If you want a whole batch of fruity yogurt, add the fruit, about 1 cup, to the mix and start from the beginning of the recipe. Enjoy!
