Sorbet & Popsicle Roundup

This roundup is for my son. This is probably his favorite food group: fruit in the form of ices (sorbet) or ice pops (popsicles). Sorbet takes a few extra steps but totally worth it.

1. Fruit Sorbet. Very popular and easy to make all year. Any fruit works. I also love mixing different berries like blueberries, blackberries, raspberries and strawberries for a deep purple color. Just always be sure to strain the seeds after blending.

2. Herbed Sortbet. The addition of fresh herbs, like lemon verbena, mint or basil, turns a basic sorbet into something more sophisticated.

3. Granita. Any fruit works, especially water heavy varieties. Even cucumber.

4. Popsicles. Peach. Blueberry. Strawberry. The recipes I posted in the past were slightly different but I have since standardized the measurements.

Ice Pop Recipe
2 cups fruit
1/2 cup filtered water
1/4 cup vegan sugar or sweetener
1/2 tablespoon fresh lemon juice

Blend. Strain. Freeze. Eat.

Salad Roundup

Even though I have a lot of recipes for salad, this roundup is not about salad salad like greens and stuff. It’s about dishes we call salad.

1. Panzanella. Two ways.

2. Coleslaw. Also make this with red cabbage, carrots and apples.

3. Potato Salad. My famous recipe.

4. Warm Lentil Potato Salad. Great combo.

5. Waldorf Salad. A veganized classic.


6. Caprese Salad. Or what to make with those gorgeous summer tomatoes.


7. Grilled Romaine. A great presentation.

8. Carrot Raisin Salad. Great for big groups.

Appetizer Roundup

The appetizers are the best part of any party. I have rounded up double the usual amount of recipes for a roundup but it is really important to have great food at a party. Check these out and party on!

1. Deviled Potatoes. Clever and delicious.

2. Beluga Lentil Caviar. Outdid myself on this one. Huge hit. How to make the creme fraiche: 1/2 cup raw cashews, 1 tablespoon freshly squeezed lemon juice, pinch salt, a few tablespoons of water at a time until the consistency is smooooooth.


3. Hummus. Always a big hit. Lots of variations including roasted garlic, garlic scape, green pea, and oil free.

4. Chopped Lentils. It’s walnut lentil pâté. Another family favorite, veganized, and way better than the original.

5. Guacamole & Chips. Everyone loves my guacamole. It’s just 5 ingredients: avocados, onions, cilantro, lime and salt.

6. Flautas con Papas. AKA taquitos. OMG. Yum!

7. Tomatillos Salsa. Authentically delicious.

8. Scallion Pancakes. I love these and they are so much fun to make!

9. Cabbage Salad in Wonton Cups. This is really all about the wonton cup. Lots of things would be tasty inside.

10. Steamed Dumplings. So much easier to make than I would have thought. Stuff with tofu, tempeh or just vegetables and steam.

11. Egg Rolls & Homemade Duck Sauce. Really? Oh, yes!

12. Potstickers. Or dumplings. Depends on where you grew up.

13. Vietnamese Spring Rolls. Impressive, yes?


14. Roasted Squash & Eggplant Napoleons with Artichoke Pine Nut Pâté. So cute and so good!


15. Squash Rollatini. Or zucchini. Or Eggplant.

16. Cornmeal Crusted Pan-Fried Zucchini. It’s all about the crust on this one.

17. Palm Cakes with Caper Remoulade. An adaptation of a recipe from a vegan restaurant in Florida. These are an impressive little appetizer that will have anyone (vegan or not) loving them.


18. Frito Misto. Another recipe from a restaurant in Florida that’s out in the ether. Lucky for us!

19. Fried Tofu Sticks & Homemade Tartar Sauce. You just have to love these! As I have learned throughout this vegan cooking project, it is all about the flavors!

20. Zucchini Pancakes. The key to these pancakes: chickpea flour.



Holiday Roundup

I am so excited about this post. What is better than celebrating the holidays vegan style? And just in time for the Jewish holidays this year.

Rosh Hashanah/Yom Kippur

1. Challah. Traditionally round, symbolizing the cycle of the year.

2. Noodle Kugel. My mother’s original recipe. Veganized.


1. Pecan Pie. The bestt thing to serve at Thanksgiving or Christmas or any time of year you want to impress your people.

2. 7 Vegetable Soup. For the matzo balls.

4. Chopped Lentils. AKA mock chopped liver.


5. Baked Creamy Spinach & Leeks. Super yum. And, again, thanks Nava Atlas.


6. Chocolate Peanut Butter Matzo Squares. A great holiday dessert. Use graham crackers the rest of the year.

Burger Roundup

There is nothing like a good burger, right?! With the right toppings and sides, a vegan burger makes for a well rounded, filling, nutritious meal!

Just one thing. Bean-based/vegan burgers get a little smushy after the first bite. So don’t get upset when it starts coming out the sides of the bread or bun. Have a fork handy and you still be in burger heaven!

1. Black Quinoa Veggie Burger. Or white quinoa. Or red. Or mixed. Regardless, this burger is number one!

2. Sweet Potato Lentil Burger. We love sweet potatoes. We love lentils.

3. Lentil Burger. If only for the onions and Russian Dressing!

4. Chickpea Burger. Chickpeas. And kale.


5. Black Bean Burger. Black beans, corn, and a great combination of spices. And of course, sweet potato fries!

6. Tempeh Burger. Super filling but super great!
