Lisa’s Million Dollar Freezer Fudge

I was inspired to make fudge by a recipe on my friend Marisa’s blog and came up with this winning combo. I am calling it my Million Dollar Fudge because I just started reading The Astronaut Wives Club (loving it!) and the author referred to Mamie Eisenhower’s famous fudge recipe. You might not know this about me, but I am a history buff, and a presidential history buff at that. I read a biography of each of the presidents of the United States, in order! Anyway, this is not Mamie’s fudge or even an adapted version, but I loved the name so I am taking it!

1 cup chunky peanut butter
1/2 cup golden cacao butter
1/2 cup dates
1/4 cup raw cacao powder
1/4 cup maple syrup
2 tablespoons almond flour or ground almonds
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
6 Dandies vegan marshmallows

Pit the dates and chop the cacao butter up into smallish pieces. Place all ingredients (except for the marshmallows) into the Vitamix or blender. Blend until smooth.

Cut the Dandies into small pieces, about 6 pieces per marshmallow, and mix them into the fudge.

Turn out into a shallow dish and press down evenly. Place in the freezer to set and store. Cut into small squares and enjoy!
