Brilliant Oatmeal Pancakes (Gluten-free & Oil Free)

Melissa over at Tastymakes came up with these brilliant Crazy Easy Vegan GF Pancakes. When they are cooking, they smell just like a big bowl of oatmeal!

Five ingredients. Gluten-free. Oil free. And whipped up in the Vitamix.

We love eating these for breakfast, lunch and dinner!

Note: This batter gets thick fast so I like to pour it right out into a bowl. Then I use my tablespoon measure to make 12 to 13 silver dollars.

1 cup rolled oats
1 teaspoon baking powder
Scant 3/4 cup filtered water (or plant milk)
1 tablespoon maple syrup
1 teaspoon vanilla extract

Place all ingredients into the Vitamix and let it rip for a minute. Pour into a mixing bowl.

Heat up a nonstick skillet and use a tablespoon measure to portion out pancakes. Flip over when bubbles start to pop on the top.

Enjoy with maple syrup or whatever else you like on your pancakes or bowl of oats. Enjoy!

2. Almond Pulp Pancakes. A great way to use the pulp when making nut milk.

3. Spelt Pancakes. A big winner around here.

4. Butternut Squash Rosemary Pancakes. A great way to use butternut squash.

5. Tofu Scramble. My go to scramble: spinach, onions, and turmeric. Oil free or not.

6. Mexican Tofu Scramble. Onions, zucchini, cumin, freshly squeezed lime and cilantro! Super flavorful and crunchy.

7. French Toast. So good.

8. Tempeh Bacon. Holy bacon!

9. Hash Browns. The best side dish there is.

10. Oatmeal. My husband says that I make the best oatmeal.

11. Coconut Yogurt. Homemade is best. Eat with fruit and The Ultimate Granola.

12. Vanilla Apricot Preserves. Nothing better to spread on toast.

13. Blueberry Blintzes. An old favorite veganized. And soooo good!

The Double Chocolate Caramel Shake-y Shake

The extra chocolate version of the caramel shake-y shake. We needed an extra boost this morning!

1 cup almond milk
2 frozen bananas
1 tablespoon raw cacao powder
1 tablespoon raw cacao nibs
1 tablespoon cashew butter
2 teaspoons lucuma powder
1 teaspoon maca powder
1/4 teaspoon vanilla powder

Pour almond milk into blender. Add the rest of the ingredients. Blend and enjoy!

* The key to the shake is the frozen banana. When you have a bunch of ripe bananas, slice them up and place them in a freezer bag/container. This way you have them on hand every day.

The Vanilla Malted Shake-y Shake

Similar to my pink shake-y shake, maca powder turns my regular morning smoothie into a vanilla malted! Delicious.

1 cup vegan milk (oat, almond, flax, soy)
2 frozen bananas *
1 tablespoon cashew butter
1 teaspoon maca powder
1 teaspoon agave
1/2 teaspoon vanilla powder

Pour milk into blender. Add the rest of the ingredients. Blend and enjoy!

The Peanut Butter Shake-y Shake

Up early for golf today. I made my husband’s favorite smoothie. Who doesn’t love peanut butter?!

1 cup oat (or any vegan) milk
2 frozen bananas *
1 heaping tablespoon peanut butter
6 pitted dates
1 teaspoon agave

Pour milk into blender. Add the rest of the ingredients. Blend and enjoy!
