Oil Free Any Day of the Week Rice & Beans


This is one of my main go to meals: any day of the week rice and beans. Now it is oil free! I was worried that it would have no taste but actually the flavors of each of the vegetables burst!

This is a dish that you can put together based on what you have in the house. Tonight it’s onions, carrots, zucchini and spinach with chickpeas and brown rice. I poured a little balsamic over the top and my husband flavored his with a few shakes of cayenne pepper. Add any flavors you wish!

General guide:
Rice (white, brown, wild, pink, Forbidden)
Beans (cannellini, kidney, chickpea, navy, pinto, black)
Vegetables (onions, zucchini, carrots, broccoli, peppers)
Seasonings (salt, pepper, garlic, Italian, Asian, Indian)

Boil up rice. Sauté vegetables in water. Season. Add beans to heat through. Serve over rice. Done. Enjoy!


Friday Night Bites: Black Beans, Rice & Tortilla Chips

This is the perfect Friday night dinner. Almost no effort but really delicious and healthy   I always keep a box of black beans in the back of the cupboard for exactly this kind of meal. I just have to add an avocado, fresh lime juice and fresh cilantro. My son likes to help me make my homemade tortilla chips but you can just as easily buy them or skip them all together.

Black beans
Fresh cilantro

Make the rice. Heat up the beans. Slice up the avocado. Chop the cilantro.

Make a plate: rice, beans and avocado. Sprinkle with cilantro and hit each plate with juice of half of a lime. Then season the plate with salt.

Serve with chips. Enjoy!
