Stuffed Artichokes

I am a little shocked that I made this all by myself! I love artichokes but I have never made one at home. I first discovered artichokes when I went to college in California and used to eat them out. But there are not many vegan options out in restaurants and I have been craving them. My Mom’s Potato Latkes (Potato Pancakes) v2

I’ve been making my mother’s latkes for years now but it turns out my father can’t have flax anymore due to a stomach issue he has. So I had to come up with a new plan for an egg replacer so we could have latkes at our annual family Hanukah party! And the winner is: potato starch. Super easy and really delicious.
