I love whipping up individual fruit crisps with whatever fruit we have on hand. I created these for my best friend who also happens to be gluten-free. Now, we make them every time we visit him.
Make these with any combination of fruits you have, fresh or frozen, any time of year. They are gluten-free and refined sugar free so they are basically breakfast. I like making individual crisps because they are fun but you can also dump all of the filling into one big baking dish and top it with the topping.
Here are two ideas: strawberries + raspberries + blueberries (above) and peaches + blueberries (below)!
Gluten Free Fruit Crisps
Ingredients
Fruit Filling
- 3 cups fresh or frozen fruit, cut into bite sized pieces
- 1 tablespoon coconut sugar
Topping
- 1 cup rolled oats
- 1 tablespoon coconut sugar
- 2 tablespoons maple sugar
- 2 tablespoons butter (vegan, obviously!)
Instructions
-
Add the fruit to a bowl and sprinkle with coconut sugar. Toss around and let sit while you make the the topping.
-
To a separate bowl, add the oats, coconut sugar, maple syrup and butter. Use your fingers to combine.
-
Set 6 oven-safe ramekins on a baking sheet. Evenly divide the fruit and topping. Bake in a 350 oven for 30 minutes. Enjoy!
