Miso Day Celebration! + Roasted Garlic Miso Dressing

Today marks the first Miso Day Celebration – a day of recognition for the treasured Miso – an ancient, tastebud enticing ingredient acclaimed for its powerful, umami flavor! I highlighted Miso in the M chapter of my new book, The Vegan ABCs Cookbook, because Miso as an all-purpose seasoning that can be used in both savory and sweet recipes.

Because Miso adds flavor, I like to use it to enhance my food any chance I get. In my world, food doesn’t have to be fancy, it just has to taste good and also pack a nutritional punch and miso is the perfect ingredient to make that happen.

You will find all kinds of Miso at the market, but generally speaking, there are two basic types:  white and red. White miso ferments for the shortest time, is light beige to yellow to an almost peanut buttery color and is sweet and mild. Red miso ferments the longest, is a deep amber to reddish brown color and is the most savory and assertive. Of course, there is a wide range of flavor and color depending on the brand, so do some research and try a few different types to figure out which one you like best.

You can use Miso in soup, marinades and sauces. Today, I am sharing with you my Roasted Garlic Miso Dressing which I created especially for Miso Celebration Day! Use it on any salad but it is especially delicious with tofu and avocados!

Roasted Garlic Miso Dressing

Ingredients

  • 1 head roasted garlic, about 1 tablespoon
  • 1 tablespoon mellow white miso
  • 1 tablespoon maple syrup
  • 1/4 cup good olive oil
  • 1/4 cup white wine vinegar

Instructions

  1. Whisk it all together. Enjoy!

  1. Do you think aquafaba might be an acceptable replacement for the oil? I’m currently on a no oil diet. And I’m so glad I found you – great recipes! I found you when searching for the carrot cashew croquettes from Greenlife. 🙂
