Taco Tuesday: Tofu Tacos with Mango Salsa

It has been a while since I posted a new taco recipe. Well, this is one is super easy and if you love mangos, you will love this combo! It comes together in no time and the flavors and textures are perfection! Maybe don’t wait until Tuesday to make them!

Make as much or as little as you need to feed your household. This recipe makes about 12 tacos.

Tofu Tacos with Mango Salsa

Servings 12 tacos



  • 1 block extra firm tofu, pressed for 10 minutes, cut into cubes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Mexican oregano
  • Salt, a pinch
  • 1 tablespoon sunflower oil

Mango Salsa

  • 1 mango, cut into a small dice
  • 1/2 red onion, cut into a small dice
  • 1 or 2 jalapeรฑos, cut into rounds or diced
  • Cilantro, a bunch, chopped
  • Fresh lime juice, to taste
  • Salt, a pinch


  • 12 corn tortillas
  • Avocado slices
  • Vegan sour cream or cashew cream



  1. To make the tofu, add the oil to bowl and add all of the seasonings. Toss to coat.

  2. Add the oil to a hot skillet. Add the tofu and coat with oil. Cook until the tofu is heated through and slightly crisp.


  1. Add all of the ingredients to a bowl and mix well. Season to taste.


  1. Heat the tortillas. Build your tacos with tofu and salsa. Top with sour cream and avocados. Enjoy!
