The Vegan ABCs Cookbook: Bonus Recipe: 5-Minute Fried Rice

R is for Rice!

Rice has fed more humans over more millennia than any other crop and an incredibly diverse ingredient that is a part of almost every cuisine on the planet. Rice can be an exciting and tasty ingredient in plant-based cooking. Just be sure to add interesting textures and season it up with tasty flavors. Serve it alongside a saucy main dish or create dishes with rice as the main ingredient like this incredibly easy 5-Minute Fried Rice.

All you need is old, cold rice and a few quick cooking vegetables and you are on your way to a meal in just a few minutes. When you make rice, always make extra. Store it in the refrigerator and use in a few days or in the freezer for up to 6 months. When it’s time for fried rice, just add it right to the pan and cook it until it’s heated through. 5-Minute Fried Rice

Servings 1

Ingredients

  • 1 tablespoon sunflower oil
  • 2 scallions, chopped
  • 1 carrot, shredded
  • 1 bok choy, chopped
  • 1/2 cup frozen green peas
  • 1 cup cold, cooked fried rice (directly out of the refrigerator or freezer)
  • 1 tablespoon tamari
  • Sesame seeds, a sprinkle

Instructions

  1. Heat a skillet over medium and add the oil.

  2. Add the chopped scallions, shredded carrots, chopped bok choy and frozen peas. Cook for three or four minutes, until the bok choy is bright green and tender.

  3. Add the rice (right out of the refrigerator or freezer) and the tamari. Mix well.

  4. Cook until the rice is heated through, a minute or two but a bit longer if frozen.

  5. To serve, sprinkle with sesame seeds. Enjoy!
