Chia Oat Parfaits with Chocolate Cashew Cream

These little parfaits were inspired by something I had at a juice place in my neighborhood. I have to be honest – i didn’t like it! It was too much – too thick, too rich, too much. But I liked the idea of overnight oats topped with creamy chocolate. Because, well, creamy and chocolate. So, I created a version that I love and I think you will too. And guess what? These little parfaits could not be easier. It’s just overnight oats with chia seeds topped with chocolate cashew cream. If you like your overnight oats thicker, add another teaspoon of chia seeds. This might look like a long list of ingredients but it’s not. You will be making your own milk and cream with cashews, so just take it step by step and you will have these parfaits in no time. And then, eat them for breakfast or a snack or really any time!

Chia Oat Parfaits with Chocolate Cashew Cream

Ingredients

Cashew Milk

  • 1/4 cup raw cashews, soaked overnight, rinsed and drained
  • 1 cup water

Overnight Oats

  • 1 cup cashew milk
  • 1/2 cup old-fashioned overnight oats
  • 1 tablespoon maple syrup
  • 2 teaspoons chia seeds (add another teaspoon for thicker oats)
  • Pinch of salt

Cashew Cream (will make more than you need for the chocolate cream!)

  • 1 cup raw cashews, soaked overnight, rinsed and drained
  • 3/4 cup water

Chocolate Cashew Cream

  • 1/2 cup cashew cream
  • 1 tablespoon raw cacao powder
  • 1 tablespoon maple syrup

Instructions

Cashew Milk

  1. To make the cashew milk, add the cashews and water to the blender and blend until creamy and smooth.

Overnight Oats

  1. To make the overnight oats, add the cashew milk, oats, maple syrup, chia seeds and salt to pint size jar. Mix to combine. Let sit for 4 hours to overnight.

Cashew Cream

  1. To make the cashew cream, add the cashews and water to the blender and blend until creamy and smooth.

Chocolate Cashew Cream

  1. Add the cashew cream, cacao powder and maple syrup to a small bowl and whisk to combine.

Parfaits

  1. To assemble the parfaits, add half of the oats to a small jar or bowl. Top each with as much chocolate cashew cream as you want. Enjoy!
