Taco Tuesday is a real thing in my house. And this combo is up there with my all time fave meals. They are super easy – eggy tofu scramble, cheesy sauce, guacamole, cashew cream, scallions and tomatoes.
First I make my eggy tofu. The recipe is below.

Top it with sliced scallions and tomatoes.
To assemble the tacos, heat your favorite corn tortillas either over an open flame or on a dry skillet. Top with the tofu, cheeze, guacamole, cashew cream, scallions, and tomatoes. Enjoy!
Eggy Tofu
Probably the simplest tofu scramble you will ever make.
Ingredients
- 8 oz firm tofu (1/2 a typical package)
- 1/2 teaspoon turmeric
- 1/4 teaspoon kala namak (black salt)
- 1 teaspoon Olive oil
Instructions

Heat the olive oil in a skillet. Add the turmeric and use a flat edge wooden spoon to spread it into the oil.

Crumble the tofu into the skillet and toss to coat with the turmeric. Add the kala namak and mix together.

Cook until the tofu is heated through, about 5 minutes.
