Do you need an easy side dish? This one always steals the show. I serve it with all kinds of different dishes but it is also great on it’s own!
This is one of those non-recipe-recipes. I always make one bunch of broccolini so if your bunch is really big, use more shallots and lemon zest. You really can’t go wrong.
Broccolini with Shallots & Lemon Zest
A light, flavorful and delicious side dish.
- 1 bunch broccolini
- 1 big shallot
- 1 tablespon olive oil
- The zest of 1 lemon, more or less, to taste
- Salt, to taste
Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water.
Thinly slice the shallot.
Heat olive oil on medium/low heat. When it is shimmering, add the shallots and cook them slowly until they are translucent and some are browning.
Add the broccolini to the pan and cook until heated through, 3 to 5 minutes.
Season with lemon zest and salt. Enjoy!
