Enchilada Lasagna + Bonus Leftover Recipe!

I love enchiladas. I love lasagna. So why not make enchilada lasagna? It’s layers of fresh, homemade enchilada sauce, corn tortillas, Sazon seasoned king oyster mushrooms, mashed potatoes, spinach and cashew cream. Does it get any better than that?

I know you are looking at this recipe and thinking, holy no way, that is way too long and way too many ingredients. First, let me say that this is the kind of recipe that could take all day or it could take 10 minutes. Second, it is totally worth it either way.

So, I suggest you try to make some of the parts ahead of time in other batch cooking you may be doing. Like, the enchilada sauce and cashew cream can easily be made ahead of time. And schedule making this for when you have leftover mashed potatoes!

No matter when you prep stuff, you will probably have more than you will need so scroll all the way to the bottom of this post for a bonus recipe for tacos!

Enchilada Lasagna

This delicious casserole is layered with Sazon mushrooms, mashed potatoes, spinach and corn tortillas.

Ingredients

Enchilada Lasagna

  • 9 8" corn tortillas
  • enchilada sauce
  • mashed potatoes
  • cashew cream
  • 1 cup fresh spinach
  • breadcrumbs (optional)
  • olive oil (optional)
  • toasted pumpkin seeds (for garnish)
  • sliced scallions (for garnish)

Enchilada Sauce

  • 1/2 onion
  • 1/2 jalapeรฑo
  • 2 cloves garlic
  • 2 pasilla chiles (seeds removed, torn into pieces)
  • 2 teaspoons coconut sugar
  • 1 teaspoon cumin
  • 1 teasponon Mexican oregano
  • 28oz can crushed tomatoes
  • 1/2 cup water

Sazon Mushrooms

  • 6 king oyster mushrooms
  • 2 tablespoons Sazon

Mashed Potatoes

  • 2 yukon golds
  • plant milk
  • vegan butter
  • salt

Cashew Cream

  • 1 cup raw cashews
  • Water

Instructions

  1. To make the enchilada sauce, chop the onions, jalapeรฑo, garlic and add to a deep pot. Sautรฉ in oil or water until they start to smell fragrant and are softening.

  2. Tear up the pasilla chiles and discard the stems and seeds add to the pot. Add the coconut sugar, cumin and oregano. Stir to coat the vegetables. 

  3. Add the crushed tomatoes and water and bring to a boil. Reduce to a high simmer and cook until the chiles are soft. 

  4. Let cool a bit and add to the Vitamix or blender. Blend until smooth. 

  5. To make the mushrooms, shred them from root to tip either using your fingers or slicing with a knife. 

  6. Drop the mushrooms into a pot and sprinkle with the Sazon seasoning. Toss to coat. Cover and cook on medium heat, stirring them a few times, until the mushrooms are cooked. It will look like there are half as many mushrooms.

  7. To make the mashed potatoes, peel and boil the potatoes until soft. Mash and add enough plant milk and vegan butter to get a smooth, silky consistency.

  8. To make the cashew cream, add cashews to the Vitamix or blender. Add enough water to just cover the cashews. Blend.

  9. To make the lasagna, start by cutting 6 tortillas in half and leaving the other 3 whole. You will need one whole one and four halves to cover the surface of the baking dish.

  10. Dip the first corn tortilla into the sauce and drain off the excess. Place in the bottom of the baking dish. Dip two more into the sauce and cover the bottom of the dish. 

  11. Add the entire batch of mushrooms covering all of the tortillas. 

  12. Dot the mushrooms with a few tablespoons of cashew cream and gently spread it out.

  13. Dip the next three tortillas (1 whole, 2 cut in half) into the sauce, drain the excess, and create another layer.

  14. Make a layer of mashed potatoes and top with fresh spinach. Dot with a with a few tablespoons of cashew cream and gently spread it out.

  15. Dip the remaining tortillas into the sauce and drain the excess and make the top layer. Swirl the top with cashew cream.

  16. Add a sprinkle of breadcrumbs and a drizzle of oil, if desired.

  17. Bake at 350 for 30 minutes.

  18. Garnish with toasted pumpkin seeds and sliced scallions. Enjoy!

Bonus recipe! If you have extra potatoes and sauce turn them into tacos! I layered sauce and mashed potatoes and topped them with lettuce, avocado crema, scallions and toasted pumpkin seeds! Fun.

    yes, i would say really any mushrooms would work. just go with what you have and make it work!
