Spiralized Baked Potatoes

I have a Kitchen Aid mixer that I got for the holidays the first year I was married. Since then, I have added the ice cream maker attachment and the pasta maker attachments. I just got the spiralizer attachment and besides all of the spiralized zucchinis I have been making this summer, I started spiralizing potatoes, because, well potatoes!

So, tell me, how much fun does this plate of potatoes look? It’s a mix of sweet and russet for the perfect pairing of flavors and textures. Just a simple toss with oil and you are done. Bake until most are crispy but they don’t all have to be. I promise, your family will thank you!

Note: If you don’t have a spiralizer, then skip this recipe and just make fries. I like thick cut, steakhouse style fries.

Spiralized Baked Potatoes

A fun way to serve potatoes!

Course Side Dish
Servings 3 people

Ingredients

  • 1 russet potato
  • 1 sweet potato
  • 2 teaspoons olive oil
  • Salt, to taste

Instructions

  1. Use a spiralizer to spiralize your potatoes. Leave the skin on!

  2. Toss with olive oil and salt.

  3. Bake at 425 until potatoes start to brown in places and look crispy. Enjoy!
