Roasted Asparagus with Capers & Breadcrumbs

Even though it feels cold outside, it is technically spring, and therefore it is asparagus season! Asparagus are one of my favorite vegetables and can be made so many ways – steamed, sautéed, roasted, as a soup, in salads, etc. But today, I want to share this basic recipe. It is exactly what the title says – roasted asparagus with capers and breadcrumbs.

I can’t really give you exact measurements because it is more of a method than a recipe, so use your judgment based on the amount of people you are serving and the size of the asparagus. You can’t really go wrong!

Roasted Asparagus with Capers & Breadcrumbs

An easy, springtime asparagus recipe!

Course Side Dish
Servings 1 platter

Ingredients

  • 1 bunch asparagus
  • Olive oil
  • Capers
  • Breadcrumbs
  • Fresh lemon juice

Instructions

  1. Preheat the oven to 400. Line a baking sheet with parchment paper. 

  2. Break the asparagus off where they naturally bend. Toss with a little olive oil and place on the baking sheet. 

  3. Sprinkle with capers and breadcrumbs.

  4. Roast for 20 minutes or so until the smell great and are browning at the tips.

  5. Squeeze fresh lemon juice over the top and serve immediately. Enjoy!
