Smashed Roasted Potatoes!

Need a new way to serve potatoes? I make potatoes several times a week and was thinking it was time to change it up a bit. This situation requires a bit more work but the end result is totally worth it!

Make enough for your family. As a side dish, I recommend 2 Yukon golds per person. As a main, I could eat all 6 by myself!

Decorate with fresh herbs and homemade cashew sour cream.

 

Smashed Roasted Potatoes!

A fun and different way to serve potatoes!

Course Side Dish
Servings 3 people

Ingredients

  • 6 Yukon gold potatoes
  • 2 tablespoons cashew sour cream (I like homemade)
  • Sprinkle sea salt
  • A few turns fresh pepper
  • Handful freshly chopped parsley
  • Handful freshly chopped chives

Instructions

  1. Boil the potatoes until just al dente, just piercable with a fork. Drain the cooking liquid and cool off for a few minutes.

  2. Preheat the oven to 400 and line a baking sheet with parchment. Place the potatoes onto the parchment and smush down with your hand or the bottom of a glass. Hands work just fine.

  3. Bake for 10 to 15 minutes, until the potatoes start turning golden brown. For extra crisp, place under the broiler for 5 minutes.

  4. Drizzle with cashew sour cream and sprinkle with salt, fresh pepper, parsley and chives. Enjoy!
