I had a craving. I had coconut on my mind. I wanted something sweet and spicy. Something crispy. So this is what I came up with. Coconut cauliflower. These coconut poppers make a great appetizer. Or a great snack. And you can use the dipping sauce to get the extra crispy pieces of coconut on the tray.
Coconut Cauliflower
A delicious and easy appetizer!
Ingredients
Coconut Cauliflower
- 1 small cauliflower
- 1 tablespoon chickpea flour
- 1/2 cup plant milk (I like cashew)
- 1/2 cup shredded coconut
- Handful chopped parsley
Sweet & Spicy Dipping Sauce
- 2 tablespoons apricot preserves
- 1 tablespoon water
- 1/2 heaping teaspoon mustard
Instructions

Preheat the oven to 350. Line a baking tray with parchment.

Cut the cauliflower into bite size pieces. Whisk together the flour and milk. Drop the cauliflower into the mixture and toss to coat well.

Lift the cauliflower out of the mixture with a slotted spoon and drop it into the coconut. Roll it around and then gently lift it out and place it on the baking tray.

Bake for 30 minutes.

Whisk the ingredients for the dipping sauce together.

Sprinkle the cauliflower with the fresh parsley. Dip and enjoy!
