I learned this basic recipe years ago from Rachael Ray. I love making it plain or adding whatever I have on hand. Today, I simply added green peas and topped it with nutty parmesan. But I have been known to add beans, vegetables, fresh herbs, and greens.
Here is the basic recipe. Cook the additions on the side and add them in at the end. And note, this reheats really well!
1/3 cup orzo
1 teaspoon olive oil
1 cup rice (I like Jasmine)
2 cups filtered water
Vegan butter, to taste
Salt, to taste
Heat the olive oil in a pot over medium heat. Add the orzo and toast until deeply golden, 3 or 4 minutes. Stir in the rice and toss with the orzo. Add the water and bring to boil. Reduce to a simmer, cover and cook for 10 to 15 minutes, depending on your stove, until the water is absorbed.
Portion the pilaf out in individual bowls and mix with butter and salt. Add your mix-ins and mix well. Enjoy!
