Ice Cream Shmice Cream #26: Fluffernutter

I am always looking for ice cream inspiration especially when friends are coming over. Here was the latest request!

I made the marshmallow vanilla base with Dandies marshmallows (like I did with my S’Mores flavor) and then added in freshly homemade peanut butter.

2 cans organic coconut milk
1 package of Dandies marshmallows
1 teaspoon vanilla extract
1 cup peanut butter, room temperature

Place the marshmallows in a pot and cook over medium heat until they soften up and kind of turn into one big marshmallow. Let cool.

Place the coconut milk, melted marshmallows and vanilla in the Vitamix and blend for a minute. It should be pretty smooth.

Refrigerate for at least 2 hours.

Pour mixture into ice cream maker and churn for 10 minutes.

At the 9 minute mark when the ice cream looks like ice cream, add the peanut butter, and churn for another minute until it is mixed into the ice cream.

Turn out into an ice cream tub (that mint green background is a Glide-A-Scoop Tovolo ice cream tub) or a freezer safe container with a piece of wax paper on top. Freeze and enjoy!
