Roasted Vegetable Antipasti Platter

I just love the colors on this platter. You can add whatever you like but this worked for me today. Roasted potatoes and/or red onions and/or beets would have been nice additions.

A few notes: Tomatoes and peppers can be roasted ahead of time and do not need to be roasted with oil or salt. For the rest of the vegetables, use sunflower oil or other high heat oil sparingly and a pinch of salt. Roast the heartier vegetables longer, in this case the butternut squash and cauliflower.

Roasted Brussels sprouts
Roasted cauliflower, with lemon zest and a sprinkle of capers
Roasted shitake mushrooms
