Hi there, friends. It has been a while since I posted. I got the flu and it turned into a sinus infection. It has been a rough couple of weeks. I am just starting to feel better but cooking the most basic recipes on the blog – rice and beans, steamed spinach and chickpeas, scrambled tofu, etc. Soon enough I will get creative again and start posting.
But there is something else going on! I just started an online cooking course through Rouxbe! It is their inaugural certification in plant-based cooking.
The good news is that I already know a lot of stuff. I actually do have knife skills and I know how to dice vegetables. But, I will have the opportunity to hone my skills and fix what I am doing wrong. It is really exciting and I am really enjoying it thus far. According to the website, this is what I will be involved in for the next few months:
“This course offers foundational instruction in plant-based culinary arts. With a focus on the application of core techniques in the plant-based kitchen, the experience will allow you to explore and practice a variety of recipes and flavors from around the world. The course begins with a quick set-up to get you started cooking right away. A full introduction to core techniques for cooking vegetables, grains, legumes, and meat and dairy alternatives is followed by a culinary world tour of plant-based foods and flavor principles. The course also covers advanced raw techniques and addresses health supportive cooking with no oil, low sodium, and gluten free options. A variety of Rouxbe Rx Wellness Menus that target specific health concerns will be offered, along with a variety of other professional resources and downloadable teaching materials.”
When it’s over, I will officially be certified as a plant-based professional. Along with my certificate in plant-based nutrition from eCornell, I just might have to start a new career!
