Braised Daikon from The Kind Diet

I got that big gigantic daikon from the CSA on Saturday. I was at a complete loss. But this recipe from Alicia Silverstone’s book The Kind Diet is SUPERB. It has made a daikon lover out of me!

It is braised in a combination of water, mirin and tamari. The daikon softens and the sauce caramelizes. Seriously, amazing.

1 daikon (I used half of the big giant one) *
1/4 cup mirin
2 tablespoons tamari

Peel and slice the daikon into thin rounds, about 1/2″. Place in a pan in one layer. Cover with water and then add the mirin and tamari.

Bring to a boil and then reduce to a simmer and cook until all the liquid is absorbed, 35 to 40 minutes.

  1. 2 tbls tamari for 1/2 diakon? that much tamari for even an entire gigantic daikon would be insanely salty. no wonder you loved it.
