In the oil free quest, I found this recipe for eggplant* fries in My Beef with Meat. I have to say it is a tasty combo but a little less exciting than when something like this is fried. But I ate most of the plate of fries myself so that means something.
I had so much of the breading and dipping mixture left over that I added a half of a zucchini that was in the refrigerator and an entire package of tempeh too. And there was still more leftover!
