This is one of my main go to meals: any day of the week rice and beans. Now it is oil free! I was worried that it would have no taste but actually the flavors of each of the vegetables burst!
This is a dish that you can put together based on what you have in the house. Tonight it’s onions, carrots, zucchini and spinach with chickpeas and brown rice. I poured a little balsamic over the top and my husband flavored his with a few shakes of cayenne pepper. Add any flavors you wish!
Rice (white, brown, wild, pink, Forbidden)
Beans (cannellini, kidney, chickpea, navy, pinto, black)
Vegetables (onions, zucchini, carrots, broccoli, peppers)
Seasonings (salt, pepper, garlic, Italian, Asian, Indian)
Boil up rice. Sauté vegetables in water. Season. Add beans to heat through. Serve over rice. Done. Enjoy!
