Cantaloupe Granita

I love granita! It is like a fancy Italian version of a snow cone. It is super easy to make and you can easily double the recipe if you have a lot of people coming over! This is the same basic recipe I would use to make sorbet, so if you want to you can just let the mixture cool, pour it into an ice cream maker and make cantaloupe sorbet.

2 cups cantaloupe * (about 1/2 big melon)
2 cups water
1/2 cup vegan cane sugar
1 teaspoon freshly squeezed lemon juice

Combine the water and sugar in a pot and bring to a boil until the sugar dissolves.

Scoop chunks of cantaloupe into the Vitamix or blender. Pour in the sugar water and lemon juice and let it go until completely combined.

Pour the mixture into a glass baking dish. I used my 9×13 Pyrex. Freeze until the granita becomes slushy, about 2 hours. Using fork, scrape ice crystals from the top layer of the granita and then stir to blend. Continue this procedure every two hours until the entire dish is filled with icy cantaloupe crystals. Enjoy!
