Ever since I made Vegan Fusion’s creamy dill dressing, I have been experimenting with using pine nuts as the creamy base for dips other dressings. Today, I present my new creamy chive and garlic dip. Perfect on these gorgeous tomatoes straight from the organic farm.
3/4 cup pine nuts
1/3 cup water, or more if too thick
Big handful of chives
1 big garlic clove *
The juice of 1/2 lemon, or more to taste
Salt, to taste
Place everything in the Vitamix or blender and process until creamy. Taste and adjust seasoning. Let sit for a little while so the flavors can come together. Store in the refrigerator. Enjoy!
Hi Lisa! I haven’t tried Vegan Fusion’s recipes yet. I made something similar to that, cilantro-tahini dressing/sauce, but you can replace cilantro with dill or chives and add extra 1/4 cup of water: http://veganmiam.com/recipes/cilantro-tahini-dressing and the recipe you’ve mentioned looks pretty good especially with the pine nuts and loads of chives. I love chives, miam miam! Oh man, I can’t believe you’ve a Vitamix! I want one someday, this will be on my upcoming wishlist…Can I see your Vitamix?!
