I can’t believe I haven’t posted this yet. I love making my tofu salad (eggless egg salad as some call it) for a great sandwich on the go. I am not going to give measurements for the spices because it is really to taste – a few shakes of each will usually do. And, the amounts depend if I use Vegenaise or my homemade grapeseed mayo.
Ketchup (Heinz is organic!)
Press the tofu. Crumble it into a bowl and sprinkle a few shakes of turmeric. Add a pinch of mustard powder, paprika and garlic powder. Mix with a dollop of mayo and a squirt of ketchup. Taste and adjust everything.
Toast up some bread and make a nice sandwich. Enjoy!
