Blueberry Popsicles

We LOVE blueberries. And what is more fun than frozen blueberries on a hot summer day?

(Based on my recipe for blueberry compote.)

Onyx Stainless Steel Popsicle Mold (6)

1 pint fresh blueberries (about 2 cups) *
1/2 cup sugar
1 cup water
1 teaspoon freshly squeezed lemon juice

In a small pot, combine the blueberries, sugar and water. Bring to a boil and cook on medium heat for 5 minutes. The berries will turn into a sauce. Take off the heat and add the lemon juice. Stir the mixture around and then let it cool. Pour into popsicle molds and freeze. Enjoy!
