Look at that gigantic eggplant! I am thinking about making a vegan moussaka. I have to do some research to figure that one out. But, for lunch today, a big summer salad with cucumber, radishes and roasted beets.
I couldn’t be more excited about the potatoes. I could live on potatoes! My plan is to roast some and make a potato salad with my homemade grapeseed mayo. I know my son will eat most of the green beans but hopefully there will be enough left for Ligurian pasta or my husband’s favorite green beans.
I am going to make another batch of zucchini banana bread because I got a 1/2 peck of apricots and I am going to make a batch of my vanilla apricot preserves. It will be perfect for breakfast tomorrow morning!
