This seems like something too fancy to make at home, right? Wrong! It is so easy and looks elegant. Make it and then invite friends over just to impress them.
makes 2 stuffed avocados (4 halves!)
2 avocados
2 cups cooked quinoa
1/4 cup cooked corn
1/4 cup cooked peas
1/4 cup chopped red onion
1/4 cup toasted almonds
Dressing
The flesh of one avocado
1/2 to 3/4 cup water (depending on how big the avocado is, more water will thin out the dressing)
The juice of 1 lime (add more if you love lime)
Salt, to taste
Cook the quinoa beforehand. And if using frozen vegetables, defrost them. Chop the red onion and toast the almonds in a 350 oven for 7 minutes.
Wash and gently slice open the avocados. Remove the pit and scoop out the flesh. Place the flesh of one of the avocados into the processor. Save the other for another recipe like avocado banana pudding.
Add the water, lime juice and salt to the processor and make the dressing.
Combine everything to make the quinoa salad. Taste and adjust the salt.
Hold the avocado shell in one hand and spoon the quinoa salad into the shell. Stuff it as high as you can. Save any leftover salad for another day. Serve and enjoy!
