I got these Adirondack blue potatoes at the farmers market the other day. Just like with the parsnips, I roasted them for a terrific snack!
Adirondack Blue potatoes
Olive oil
S and P
Preheat oven to 400. Slice into thin rounds, toss with olive oil, salt and pepper. Turn out onto a baking sheet and make sure they are all flat. Bake for 30 minutes, or until nicely browned. Take them out and sprinkle with salt. Eat immediately and enjoy!
