There is a place on 1st Avenue called 879-Taco and back in the day I would get quesadillas filled with sautéed onions and corn and topped with lettuce and avocado. Here is my version!
1 cup corn (this time of year, I like organic corn in the can)
Handful of lettuce
2 flour tortillas
Raw Cheese and/or refried beans (for my husband)

Dice the onion and sauté in oil until translucent. Add corn, salt and pepper and heat through. Heat the refried beans. Chop the lettuce. Dice the avocado.
Heat tortilla in a skillet. Spread generously with cheese or refried beans. Top with onion/corn mixture, lettuce, and avocado.
