Vegan Penicillin

I have done my research and because we have been dealing with bronchitis and stuffy noses all winter, I wanted a soup that makes us feel better. Even though the cold/virus/bacterial infection has to run its course, this soup does the trick.

Why does “Jewish penicillin” make us feel better? High levels of cysteine, an amino acid found in protein, protects the body from damage from free radicals and can help detoxify it.  Plant based sources for cysteine include: red peppers, garlic, onions, broccoli, Brussels sprouts, and oats. I have been making this soup all winter to make us feel better.

2 cloves of garlic
1 onion
1 red pepper
1 small head of broccoli
3 big or 6 small Brussels sprouts
1 cup vegetable stock
1 cup oat milk
Olive oil
S and P

Prep everything: mince the garlic, slice the onion into semi-circles, dice up the pepper, chop up the broccoli and shred the Brussels sprouts.

Sauté garlic in olive oil on a low flame until soft. Add the onions and sauté until translucent. Add the peppers, broccoli and Brussels sprouts. Add the stock and oat milk and season with salt and pepper. Bring to a boil and then simmer for a few minutes. Eat hot. Enjoy!
