It took a few months and a major pasta phase, but we are finally in a great lunch groove. Not only is this what I want to send to school, but this is what my son asks me to send.
This Planetbox lunch box is packed with amazing food and it comes home empty every day. I send marinated tofu (upper left hand compartment), vanilla coconut milk yogurt and apple juice (in the carry bag) and a rainbow of fruits and vegetables. A typical spread looks like this:
Red peppers
Yellow peppers
Orange peppers
Green cucumbers
Green snap peas or green beans
Blue blueberries.
Peppers are full of vitamins A and C and antioxidants, cucumbers are detoxifying because they are 95% water and help flush the system, green beans and snap peas are high in fiber and protein, and blueberries are chock full of phytonutrients.
And I am very meticulous about the way I cut everything so that there is nothing that a little boy would not like, for example, the ribs or seeds of the peppers or the seeds of the cucumbers. I prepare lunch with love and my son’s health and well being are proof that I am doing something right!
I need to get a planet box for my young girls too! Clearly, the lunch in that picture is made with love!
