Fried Tofu Sticks & Tartar Sauce

Fried tofu sticks with tartar sauce:

A. Anything fried is good.

B. Anything fried dipped into a delicious sauce is great!

We have been eating these all weekend in between meals. It would be a great appetizer. The battering technique courtesy of my friend and collaborator Colleen. The double dip into the water seals the batter for extra crispiness.

Fried Tofu Sticks
1 block extra firm tofu
Water
Cornstarch
Panko breadcrumbs
S and P
Sunflower oil

Press the tofu for an extra long time.

Cut into sticks by cutting the tofu block in half, half again and then into sticks. Make a breading station with the following set up:

1. bowl of water
2. bowl of cornstarch seasoned with salt and pepper
3. bowl of Panko

Dunk the tofu into the water and then coat with cornstarch. Dip it back into the water and then into the Panko to coat.

Heat a thin layer of oil in a non-stick skillet and place the tofu stick in the oil. When the first side is golden, turn to get the 2nd side. Do this 2 more times until all 4 sides are crisp and golden brown.

Tartar Sauce
1/2 cup Vegenaise
3 tablespoons relish
3 teaspoons capers
2 teaspoons fresh lemon juice
S and P, to taste

Mix all ingredients together.

Dip and double dip. Enjoy!
