Macadamia nuts are super delicious in baked goods and these cookies are no exception. I used whole wheat pastry flour, my new go to flour for cookies, but all purpose flour would probably work too.
makes 18 cookies using a 3 tablespoon ice cream scooper
1 3/4 cups whole wheat pastry flour
1/2 cup vegan brown sugar
1/2 cup vegan cane sugar
1 teaspoon vanilla powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 flax eggs (1 flax egg = 1 tablespoon ground flax + 3 tablespoons water)
1/2 cup sunflower oil
1/4 cup oat milk
1/2 cup macadamia nuts, chopped
1/2 cup vegan white chocolate chips
Preheat the oven to 350. Line a baking sheet with parchment paper.
Sift the flour. Combine all dry ingredients. Add the wet ingredients. Mix well. Using the ice cream scooper, make cookies.
Bake for 25 to 30 minutes. Enjoy!
