Maybe I am late to the goop.com party but I recently found the site, the collection (I love my Monrow Tees), and the recipe section where I found a version of this salad, which I love making now.
Carrot Miso Dressing (makes about 1 cup)
1 tablespoon chickpea miso
2 tablespoons brown rice vinegar
2 tablespoons water
1/4 cup avocado oil
Place all ingredients into the food processor. Process until combined. Refrigerate until ready to use.
1 heart of romaine
1/4 of a red onion
Chop the lettuce. Dice the onion. Cube the avocado. Top with dressing. Enjoy!
