Frozen Chocolate Mousse Pie

This pie was sort of accidental in the making. It is a combination of my chocolate pudding recipe and my chocolate power shake-y shake recipe. I was thinking really powerful family size smoothie but then I thought pie. So I poured it into a pie plate, decorated it with chopped walnuts and froze it. When I took it out and let it soften for 5 minutes, I was able to cut it into wedges. It is the perfectly healthy dessert. Now I make it all the time. It is great for parties!

2 very ripe bananas
1 avocado
6 pitted dates
1/2 cup cashew butter
1/4 cup raw cacao powder
1 cup oat or almond milk
2 tablespoons maple syrup
1 teaspoon vanilla powder
1 teaspoon salt
1/4 cup walnuts, for garnish

Place all ingredients into the blender and blend until smooth. Pour into a 9″ round pie dish.

Grind the walnuts in the processor and sprinkle around the perimeter. Freeze for several hours. Take out about 15 minutes before ready to serve.

Serve plain or with walnut whipped cream. Enjoy!
