1 package active dry yeast
1 tablespoon vegan cane sugar
1 tablespoon salt
2 cups hot water
5 1/2 to 6 cups bread flour
More water, if necessary
Olive oil
Whisk the yeast, sugar, salt and water together in the bowl of the mixer. Stir it around. Sift 5 1/2 cups of flour into the yeast water.Mix until the dough is completely together and pulling off the sides. If it seems like it is not coming together, add water by the tablespoonful until it does, or if it is too loose add flour.
Brush a glass bowl with olive oil and turn the dough into the bowl. Cover with a damp towel and let it rise for a few hours, until it doubles in size.
Preheat the oven to 425.
Sprinkle a clean surface with a bit of flour and turn out the dough. Punch it down and knead it by hand a few times and then cut into 4 little dough balls. Form four little loaves and place them on a baking sheet. Slice the top of each loaf three times diagonally.
Bake for 35 to 45 minutes or until the crust is golden brown. Enjoy!
