Colleen’s Toasted Coconut White Chocolate Chip Cookies

Another recipe from my friend Colleen…veganized! I had to buy vegan white chocolate chips since when I tried making these cookies the first time, I learned that my homemade white chocolate does not bake well…or at all. It just melted right out of the cookies!

makes 2 dozen cookies using a 3 tablespoon ice cream scooper

2 cups all purpose flour
1 cup vegan cane sugar
1/4 cup coconut sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon vanilla powder
1/4 teaspoon salt
1/2 cup coconut oil
3 flax eggs (1 flax egg = 1 tablespoon ground flax + 3 tablespoons water)
1 cup toasted shredded coconut
1 cup vegan white chocolate chips

Toast coconut in a 350 oven for 10 minutes. Remove from the oven but leave it on while making the batter. Line baking sheet with parchment paper. Make the flax eggs.

Sift the flour into a bowl. Add the sugars, baking powder, baking soda, vanilla powder and salt. Mix with a fork. Add the oil, flax eggs, coconut and chips and mix until everything is incorporated.

Using a 3 tablespoon ice cream scooper, scoop cookies onto baking sheet. Bake for 20 minutes. Let cool. Enjoy!
